I can’t tell you how perfect vanilla cupcakes are, for any occasion! They are the easiest to make – even to tweak the recipe a bit by adding cinnamon, or other flavorings.
I made these cupcakes for a girl’s (hence the pink frosting) baby shower. They are the cutest little things to pop into your mouth. Scroll down for the recipe 🙂
Scrumptious Vanilla Frosting
16 tablespoons unsalted butter, at room temp.
4 cups powdered (confectioner’s) sugar, sifted
1 teaspoon whole milk
1/2 teaspoon vanilla powder (or 1 teaspoon vanilla extract)
1/8 teaspoon salt
For the frosting:
1 Mix the ingredients in a mixer and whip together at a high speed until light and airy, about 3 to 5 minutes. (Start slowly so powdered sugar doesn’t go everywhere). Load the frosting into a large piping bag fitted with a star tip and frost each cupcake in a swirl.
